We Sri Lankans are so good at adapting western ingredients into Sri Lankan dishes. If you visit Sri Lanka you can find sausage stirfry (AKA "sausages thel dala/සොසේජස් තෙල් දාලා"), Devilled sausages, and even sausages curry. Meatball curry is another one of those dishes that I truly love. And this sausage stirfry is one of the stir-fry dishes that I make using hotdogs and a good amount of black pepper to get a nice peppery flavor. If you love sausages or hot dogs I'm sure you're going to love this dish.
You only need a handful of ingredients for this stir--fry and you're good to go. And the recipe is easily customizable. If you need more tang, you can add more diced tomatoes. Or some ketchup would also work.
For this recipe, you don't actually have to thaw your sausages/hotdogs if they're in the freezer. All you have to do is to separate the sausages and cut them into approximately one-inch pieces. If it's hard for you to cut or separate the sausages hold them under the tap for about 2 - 3 mins. They would loosen up.
I use a quite a lot of black pepper since I love the black pepper flavor in this recipe. I highly recommend using freshly ground black pepper since they have a nice flavor and aroma. If you need to spice up the dish even more add some chopped habaneros when you stirfry your onions.
I usually serve sausage / hot dog stir-fry either with white rice and Coconut Sambol or with rice and red lentil curry. You can even make sandwiches with this. Another good option is to load a hoagie roll or sub sandwich bun with sausage stir-fry and then put some mozzarella cheese on the top and broil it in the oven until the cheese is melted. Oh, it's so good my mouth is salivating as I'm writing this.

Heat oil in a pan. Add curry leaves and chopped garlic. Mix and then add finely chopped onion. Mix well and add chopped tomatoes and a bit of salt. Cook until tomatoes get mushy.
Then add your sausages/hot dog pieces and black pepper and mix really well. Saute until they get red fry marks.
And then add ¼ cup of water, mix, and cook on medium-high heat until all the water evaporated. (You can also add a little bit of ketchup or chili sauce at this point for more tanginess if it needs)
Then mix in your thick slices of onion and green chili, mix and turn off the heat. Adjust salt if needed.
