These Soy Brown sugar Brussels sprouts are so good and very quick and easy to make. I used my air fryer in this recipe, but I also added the oven instructions for you. It’s the perfect vegetable side dish to serve for a weeknight dinner or for a quick lunch. These Brussels sprouts are a great dish to serve at Christmas or thanksgiving or any other gathering too.

Steaming Brussels Sprouts
I usually steam my Brussels sprouts before air frying or baking. This makes them cook evenly when you air fry/ roast them. Otherwise, I notice, especially with larger Brussels sprouts, that the inside remains uncooked while the outside turns brown and roasted. And it shortens the Air Fryer or Oven time which is always a plus. I believe they turn a little sweeter too this way.
For steaming you can use any of the following methods. I use the microwave method which is the quickest and easiest for me.
- Microwave: Wash the Brussels sprouts and cut them into halves. Put into a bowl. Cover with a plate and microwave for about 3 minutes on high power to steam. Then drain the excess water and let them dry a bit before adding seasonings and Air frying/roasting them.
- Steamer: Add the washed and halved Brussels Sprouts to the steamer basket and steam them for 5 – 7 minutes. Remove from the basket and let them dry out a little bit.
- This method is more like blanching but this method works too. Add the halved Brussels Sprouts into a bowl and pour boiling hot water to cover them up. Let them sit for about 5 minutes. Drain all the water and spread the Brussels Sprouts on a tray or a plate for the steam to escape and dry them up.
Seasonings Ideas
I use soy sauce, brown sugar, some ginger, and a little bit of sesame oil for this recipe. It kind of reminds me of Red Lobster Brussels sprouts. But you use this same method and can use any seasonings of your choice. A few of my other favorites are,
- Extra Vergin Olive Oil, salt, pepper and garlic powder with some parmesan cheese sprinkled at the end
- Salt, pepper, a splash of balsamic vinegar with some honey to balance the flavors
- I also make it a little spicy sometimes with chili flakes, salt, pepper, onion, and garlic powder with some oil
- You can also add some bacon bits halfway through cooking and they will be nicely crisped at the end.
Oven Instructions:
If you don’t have an air fryer, or you’re making a large batch, you can use your oven to make these Soy Brown Sugar Brussels Sprouts. While it may take a little longer than air frying, they always come out nicely roasted and delicious.
For this first steam the Brussels sprouts. You can use any of the methods I mentioned above. Then mix the Soy Brown Sugar mixture with the Brussels sprouts. Spread on a baking tray and bake at 400F for about 12 – 15 minutes. You might need to bake it longer depending on how big the Brussels sprouts are.

If there are any dead, damaged leaves, remove them from Brussels Sprouts. Cut the stem off. Wash them well and cut them into halves. Put them into a bowl.

Cover the bowl with a microwave-safe plate and Microwave (on high) for 3 minutes. Then drain any water that has accumulated in the bottom and let the steam to escape and let the Brussels Sprouts cool down a little bit.

In a small bowl, mix soy sauce, brown sugar, sesame oil, avocado oil and ginger.

Add the sauce mix to the Brussels Sprouts and mix very well.

Spread the Brussels Sprouts on the Air Fryer basket.

Air Fry for 7 - 9 minutes at 400F. The air fryer time may vary depending on the air fryer model as well as the size of the Brussels sprouts. Please check after about 5 - 6 minutes and then add more cooking time as necessary.
